There’s something so comforting about a simple, delicious cookie. Pacific Trading Company isn’t reinventing the wheel in terms of cookie making, but what they do they do oh so right. We really enjoyed every cookie we purchased – including the vegan ones!We stopped in on a whim while strolling through the area shops. Cookies were about the last thing we needed after a trip to the coast that was basically planned around eating, but the smell of fresh baked goodness emanating from their doorway was too much to resist. We bought a dozen and my favorites were the peanut butter and the coconut macaroons. I especially have to highlight these macaroons. Not only were they the perfect sweet and buttery balance, but they were somehow so soft on the inside yet firm on the outside. True baking talent!It’s no wonder so many refer to this as a Santa Cruz staple. If I had this place in my backyard, you can bet I would be coming here weekly and truly adding that COVID19!
