My housemate cooks and bakes by smell, not taste. But he can taste detail also. His birthday is today 9/21/2020 and he loves Italian Rum Cake. Luckily I was in the neighborhood of The Cookie Factory on Congress Street last Wednesday and I was able to order a freshly baked Italian Rum Cake . I picked it up Saturday. He loved it and likes the fact that the rum was in the filling and not drowning the cake. (He love flavor & texture but not alcohol.) As he was enjoying his birthday cake, he shared with me how he knew it was baked fresh. He said he could tell by the Buttercream Frosting. He said after 3 days the sugar crystalizes and becomes crusty. WOW! I never knew!! Thank you The Cookie Factory for doing such a great job.
